Job Description:
Conducts scientific experiments in starter culture strain
isolation and characterization, fermentation, cheese-making, and
bacteriophage studies; and is involved in troubleshooting
production issues and improving starter production processes.Job
Duties & ResponsibilitiesStarter Culture Research and
Development
- Projects, plans, executes and coordinates professional level
microbiological studies for starter culture research and
development; formulates scientific approaches and techniques with
some supervision
- Knowledge base to conduct experiments in starter culture
microbiology with application in cheese-making and whey
processing
- Must be able to manage projects independently with some
supervision
- Must ensure the depth and scientific quality of experimental
design, project management, and documentation. The scope of
scientific inquiry includes starter culture strain
characterization, fermentation, bacteriophage analysis and
propagation, and the microbiology, genetics and applications of
lactic acid bacteria. Studies also include application of lactic
acid bacteria to cheese-making and whey processing
- Culture development activities include construction and
validation of new starter culture blends according to established
scientific policiesTroubleshoot Cheese Culture Issues
- Must have scientific knowledge base to devise science-based
solutions to starter culture issues (propagation, fermentation,
production, cheese making) with some supervision
- Must adhere to establish processes, policies, and safety
standards. Assists and/or lead monitoring starter culture
performance trends and bacteriophage infections
- Other activities/projects that affect the quality, food safety
or Trademark Excellence of company's cheese and whey
productsContinued Development of Knowledge-base to Ensure
Continuous Improvement of Starter Cultures Techniques and Processes
Development
- Maintain external scientific contacts within the industry;
attend scientific meetings to stay current with scientific
fields
- Write project updates and scientific reports
- Maintain internal contacts with other departments on technical
issues
- Participate on cross-functional teams including R&D,
Manufacturing, Technical Services, and Supply Chain
- Assist other departments in understanding and implementing
Starter Culture Department objectives
- Keep current on developing technologies within the starter
culture and cheesemaking fields
- Read and keep current with technical, trade, and scientific
journals, attend scientific meetings, and vendor seminars on new
equipment and methodsAdditional Requirements
- Actively develop research ideas, approaches, and
recommendations
- Other activities as directed by the Manager of Starter

- Experience with lactic acid bacteria and other microbiological
systems strongly preferred
- Project Management training preferred
- Experience with molecular microbiology methods. Scientific
knowledge base in microbiology, genetics, biochemistry or related
scientific fields
- Knowledge of the microbiology, genetics, and applications of
lactic acid bacteria is desirable
- Good laboratory and research skills
- Ability to manage multiple projects while maintaining focus on
departmental prioritiesExperience Preferred
- Master's degree, with internship or other experience in the
dairy industry (preferably in starter culture) preferred
- 2 year(s): Bachelor's degree and two (2) or more years of
related experience in the dairy industry, preferably in starter
culture microbiology (lactic acid bacteria)Education Required
- Bachelor's Degree or better in Microbiology or related
fieldPreferred
- Master's Degree or better in Microbiology or related field
